Long before nutrition became a subject taught in classrooms, the tribal communities of India had already written their own textbook of dietetics – not on paper, but in the kitchen garden, the forest trail, the granary basket, and the fermenting bamboo tube.

Across the state’s 26 districts and more than one hundred tribal and sub-tribal groups, food has never been merely a matter of calories. It is medicine, memory, ritual, and relationship with the land, all served on the same plate. Every tribe, shaped by its own altitude, river system, and forest type, has arrived at a distinct way of eating that suits its geography and its labor – a diversity of diet as rich as the state’s diversity of language and custom.

As modern lifestyle diseases creep into even our remotest villages and as young people increasingly reach for packaged, processed alternatives, it is worth pausing to ask what we stand to lose – and what we might yet recover – by looking closely at the traditional food systems of our hills.

A Larder Shaped by Altitude and Ethnicity

India’s food map follows its topography and its tribes. In the Siang and Dibang valleys, the Adi and Idu Mishmi communities have long depended on a diet built around glutinous rice, bamboo shoot, wild greens gathered from the jhum fallow and forest edge, and the fermented rice beverage locally called apong or apong-e, prepared with an indigenous starter cake and consumed at every social occasion.

Among the Adi, meals are regularly accompanied by an array of foraged wild vegetables such as onger, oin, oik, oko libo, rori, aksab, gende, okomanang, olap, and ogen, while wild fruits such as tair (rayil), tapir (tapil), and kopi are eaten alongside food as a traditional appetizer, together forming a foraged pantry as varied as any cultivated one.

In the Namsai, Lohit, and Changlang belt, the Tai Khamti community cultivates Khaw Tai, a short-grained aromatic rice now recognized with a geographical indication tag, which is steamed and served with fish soup, sesame-rice cakes, and boiled greens.

In the high, cold reaches of Tawang and West Kameng, the Monpa and Brokpa yak-herding communities rely on churpi, a naturally fermented yak-milk product, along with butter tea and barley – foods evolved specifically to sustain the body against altitude and cold. In the Ziro valley and surrounding hills, the Apatani and Nyishi communities draw on finger millet, foxtail, and adlay millet (locally anyat), fermented soybean, and a distinctive foraged delicacy called pika pila, alongside a wide range of wild leafy vegetables and tubers gathered from community forests. The Singpho of Changlang, meanwhile, gave the region its distinctive smoked phalap tea. Each of these is not a curiosity but a functioning nutritional system, calibrated over generations to the altitude, the growing season, and the labor demands of a particular tribal economy.

Food as Medicine: The Health Dimension

Ethnobotanical surveys conducted across the state – from the Galo villages of Lower Siang to the East Siang plains – have together documented several hundred species of wild edible plants used by India’s tribes as food, spice, and medicine in the same breath. Many of these greens, tubers, and fruits are now being screened by researchers for their nutraceutical value: fiber content, antioxidant properties, and traditional use in treating digestive ailments and general debility. This is not folklore dressed up as science – it is a genuine reservoir of preventive nutrition that mainstream dietetics is only beginning to catalogue. A diet built on foraged greens, fermented foods rich in natural probiotics, minimally polished millets and rice, and lean wild or free-range protein is, by any modern clinical measure, closer to an ideal diet than the refined-carbohydrate, ultra-processed alternative now spreading through our towns. The irony is stark: the food our grandparents ate out of necessity is precisely the food nutrition science today recommends by design.

The Rhythm of Fairs and Festivals

Nowhere is the inseparability of food, faith, and fellowship more visible than in the tribal festival calendar. Nyokum of the Nyishi, Mopin of the Galo, Solung of the Adi, Reh of the Idu Mishmi, Si-Donyi of the Tagin, Losar of the Monpa and Buddhist communities, and Boori-Boot Yullo of the Apatani are not merely religious observances; they are annual audits of the harvest, moments when apong is brewed in every household, mithun and pigs are shared communally, and the year’s foraged and cultivated bounty is offered first to the deities and then to the community.

In pastoral Tawang and West Kameng, Losar brings out preserved yak meat, churpi, and barley delicacies stored through the winter, while in the plains districts, Bihu-linked and paddy-harvest festivals among Deori and other communities follow the same underlying logic of thanksgiving through food.

Village fairs held around these occasions double as informal seed and produce exchanges, where farmers barter local rice varieties, millet, chilies, and tubers, quietly performing an act of community-level genetic conservation long before the term entered any policy document. Even the daily rhythm of tribal life – the morning foraging walk, the communal fishing expedition, the shared granary during lean months – reflects a lifestyle in which food procurement, physical activity, and social obligation are woven into one another, a pattern strikingly aligned with what modern preventive health advice now recommends. These gatherings deserve to be seen not just as cultural spectacle for outside visitors, but as functioning institutions of food security, seed exchange, and social bonding that modern development planning would do well to strengthen rather than sideline.

Nature as Larder, Nature as Temple

The tribal relationship with food cannot be separated from the tribal relationship with the forest. Sacred groves, consecrated forest patches protected under community custom, along with restricted hunting and fishing zones, and taboos around the harvest of certain plants and animals during breeding seasons, are not primitive superstition; they are indigenous conservation science encoded in ritual language.

A community that draws its greens, fish, bamboo shoot, and game from a particular forest patch has every incentive, and through custom every obligation, to protect that patch. This ethic extends to river systems too: clan-regulated fishing stretches and seasonal bans on certain catches have long protected fish stocks that remain central to the tribal plate. The steady erosion of customary institutions such as the village council-administered forest, under pressure from expanding jhum cycles, commercial logging, and unregulated hunting, therefore threatens not only biodiversity in the abstract but the literal food security of the communities concerned. Strengthening customary conservation practice, rather than displacing it with purely state-led forestry, is likely to be both more effective and more just.

In-situ Conservation: The Living Larder

India is fortunate that much of its plant and animal food diversity survives in-situ – conserved in the very ecosystems where it evolved, rather than in artificial storage. Village sacred groves, community-managed forests, home gardens, and kitchen orchards, and the traditional practice of maintaining diverse crop mixtures within a single jhum plot all function as living gene banks. A single Adi or Nyishi home garden may quietly hold a dozen local rice landraces, several varieties of chili and citrus, and dozens of semi-domesticated greens – a diversity no single research station could easily replicate. Recognizing and formally supporting these spaces, through community forest resource rights, biodiversity heritage site notifications under the Biological Diversity Act, and incentives for farmers who maintain traditional landraces, remains the most cost-effective conservation strategy available to the state.

Ex-situ Cultivation: Backing Up the Larder

In-situ conservation must be complemented by ex-situ measures, particularly for species under acute pressure from habitat loss, climate shifts, or over-harvesting. Recent germplasm exploration missions by the National Bureau of Plant Genetic Resources, working with horticulture research centers, including the one in Dirang, have collected wild edible fruit species from western for conservation in field gene banks and seed repositories, securing this diversity against future loss while making it available for horticultural improvement. District-level seed banks, botanical gardens attached to state agriculture and horticulture departments, tissue-culture repositories, and community seed-saving cooperatives run by women’s self-help groups deserve expansion as a deliberate, funded state program rather than being left to occasional research expeditions alone.

Research, Documentation, and Food Tourism

Turning inherited knowledge into a lasting public asset calls for focused research: identifying and recording traditional food plants village by village before elder knowledge-holders are lost, giving them proper scientific classification, and, where warranted, laboratory analysis of their nutritional and medicinal compounds. Universities, ICAR centers, and teacher training institutions across the state could jointly anchor such a program, generating both scholarship and practical guidance for farmers. Well-documented traditional knowledge also strengthens community claims to Geographical Indication status, of the kind already secured for Khamti rice, Adi apong, yak churpi, Singpho tea, and tribal millets. Alongside research lies an equally real opportunity in food tourism: culinary trails timed to Solung, Mopin, Nyokum, and Losar, and homestays built around Khaw Tai rice, apong, yak churpi, and forest greens, could give visitors a genuine taste of the state while creating income for women-led food enterprises and a market-based reason for the young to keep traditional knowledge alive.

A Case for Deliberate Policy

None of this will happen by accident. It calls for coordinated policy attention:

  • Legal recognition of village sacred groves and community forests as in-situ conservation sites under the Biological Diversity Act and community forest resource provisions.
  • Sustained funding for ex-situ seed banks, field gene banks, and botanical repositories at the district level, not only at premier research institutes.
  • A coordinated documentation drive, involving schools and universities, to record traditional food knowledge before it is lost to generational change.
  • Continued support for geographical indication registration of tribal food products, paired with quality control and market linkage, so that GI status translates into real farmer income.
  • Investment in food-tourism infrastructure – homestays, certified local-cuisine kitchens, and well-publicized festival calendars – developed in partnership with the communities themselves.

India’s tribal communities have, without any formal training in nutrition science or conservation biology, built food systems that are healthy, biodiverse, and ecologically self-renewing. The task before us now is not to teach them anything new, but to study, document, protect, and responsibly build upon what they already know, before the last apong starter cake, the last home-garden landrace, and the last elder who can name every wild green in the forest are lost to time.
